Slow Cooker Shredded Chicken – Recipe

gluten free and dairy free
 use organic whenever possible
  • one red pepper, chopped
  • one onion, chopped
  • one jar of organic salsa (I buy any brand at Whole Foods/Sprouts)
  • four boneless, skinless raw chicken breasts
Throw the peppers and onions into the slow cooker, place chicken breasts on top of them, cover with salsa.  Cook on high for 4-6 hours.  Once cooked, take two forks and shred the chicken in the slow cooker.  Stir everything together.  Serve over a bed of black rice and cover with fresh vegetables.  Make tacos with corn tortillas and fresh fixings.  Serve over a salad.  Get creative.
