SLOW COOKER SHREDDED CHICKEN
gluten free and dairy free
use organic whenever possible
one red pepper, chopped
one onion, chopped
one jar of organic salsa (I buy any brand at Whole Foods/Sprouts)
four boneless, skinless raw chicken breasts
Throw the peppers and onions into the slow cooker, place chicken breasts on top of them, cover with salsa. Cook on high for 4-6 hours. Once cooked, take two forks and shred the chicken in the slow cooker. Stir everything together. Serve over a bed of black rice and cover with fresh vegetables. Make tacos with corn tortillas and fresh fixings. Serve over a salad. Get creative.
