Easy Mango Salsa – Recipe

Have you had mango salsa?  It is ridiculously easy to make.  Mangoes are in season right now and priced to sell.  You can make this salsa with any type of mango that you find in the market.  If your mango isn’t quite ripe, make this anyways.  If you let the salsa sit in the fridge for a day or two, it will get sweeter and juicier.  Use the salsa over grilled fish or chicken.  Mangoes are filled with vitamins and fiber.  A very pretty food that makes us pretty from the inside out. SO YUM!

Mango Salsa 
-use organic whenever possible-
  • One whole mango, cut and diced (cutting tips HERE!)
  • Two tablespoons fresh cilantro, minced
  • Two teaspoons fresh lime juice
  • sea salt to taste
  • Two tablespoons jalapeno pepper, minced
  • One tablespoon red onion, minced
  • Two tablespoons red bell pepper, minced
  • 1/2 of an avocado, diced – optional and dice just prior to eating
Mix everything up, except for the avocado and store in a glass bowl in the fridge.  If you’d like to add the avocado, dice, and mix in just before serving.  If you add the avocado during the prep time, it will brown over a few days.
This will keep in the fridge for 3-4 days.
